A blast from the past for a moment, please - my mother places before me a saucer holding three gingery snaps and a delicate teacup filled with piping hot lemon curd, homemade from lemons she's squeezed herself. My five-year-old fingers tenderly dip a cookie into the pudding, and together they form the perfect mouthful - the resounding "bite" of ginger, the zing of lemon, and the over-riding sweetness of both. Yes, Glow Gluten Free Gingersnaps are this delicious, and I admit I purchased a box of lemon meringue pie filling in an attempt to recreate my childhood passion. And it was heaven! These past few weeks have been a blur of work for my day job, travel, a nasty cold, and more travel. I have barely had enough time to think except when in survival mode. And you know what? I've discovered that #glutenfree cookies are essential to my survival -- specifically, Glow gluten-free cookies! I've been setting them aside as a special treat over the past tough weeks, and they've helped me push through! Glow cookies taste fantastic, and are not only gluten-free, but also rice-free, which is highly unusual in the gf world. To add to their goodness, they are also dairy-free. Yay! It is SUCH a joy to not only have cookies that are pre-made (so that I don't have to pull out the Kitchenaid every time I need a munchie), but that they taste like "regular" cookies....I don't feel like I'm missing a thing! After discovering a surprisingly delicious gluten free cookie, called Glow, I decided to put my culinary skills to the test and make some creative ice cream sandwiches. I started by handmaking gourmet, seasonal, all natural ice cream flavors. I then matched them with different Glow cookies. Each new flavor was better than the last! I’ve heard a lot about these GFCF cookies made with love from Jill Brack, and I really wanted to get a taste, so Expo was the perfect opportunity. I sampled all 4 crunchy flavors (Chocolate Chip, Double Chocolate Chip, Gingersnap & Snickerdoodle) and I have to say that if you loved Chips A’hoy cookies before you went gluten free, you have found your gluten-free replacement! We received an amazing gift from Jill at Glow gluten free cookies the other day – a box of her Double Chocolate chip, Gingersnap, Chocolate Chip, and Snickerdoodle Cookies! My Favorite Valentine’s Gifts Under $20! - This Valentine’s dessert is divine. I has the pleasure of tasting the Glow goodness and doing a show about them last summer. Although the room was filled with interesting, savvy, and powerful New York women, some how Jill and I met and felt like we were destined to be friends in that very instant.
